Warm Vegetable Salad

Warm Vegetable Salad

Simple can be so delicious, as you will find with this easy-to-make dish. Serve it with roast chicken or grilled pork chops and your favorite potato accompaniment.

 

¼ cup olive oil
1 large sweet onion, chopped
1 tablespoon chopped fresh sage
2 Granny Smith apples, peeled and shredded
1 head green cabbage
6 carrots, peeled and shredded
1 teaspoon salt
¼ cup apple cider vinegar
½ cup chicken or vegetable broth

Equipment:  Large pot
Natural gas stovetop

Serves 8 to 12

Heat the olive oil in the pot on medium heat. Add the onion and sage and saute until the onion is translucent. Add the apple and cook until the mixture begins to take on a golden color. Add the cabbage, carrots, salt, and apple cider and mix well in the pot. Cook for 10 minutes, stirring occasionally. Add the broth, cover, and cook another 5 to 10 minutes or until the cabbage is tender but still a little crisp.
