Peach Cobbler with Biscuit Topping

When Southern peaches are in season, there’s no better comfort-dessert than warm homemade peach cobbler–especially if the recipe has a shortcut that makes baking easy!

½ cup sugar
2 tablespoons butter
3 or 4 frozen biscuits
melted butter
sugar
pecan praline ice cream (optional)

Equipment:  8″ glass baking pan
Natural gas cooktop and oven

Serves 4 to 6

Preheat oven to 375 degrees.

Butter the baking pan.

Place the peaches and sugar in a medium saucepan, bring to a simmer over medium heat, reduce heat to low, and cook until just tender, about 10 minutes. Stir in 2 tablespoons of butter until melted and set aside to cool.

While the peaches are simmering, take the biscuits out of the freezer and let them soften for a few minutes. Cut each biscuit in half so that you end up with 6 or 8 skinny biscuit rounds. Place back in the freezer.

Pour the peach mixture into the baking pan. Place the melted butter and the sugar each in a small bowl. Take each biscuit half, coat it generously in butter and then in sugar, and place on top of the peaches. Use as many biscuit halves as will cover the fruit.

Bake for 30 to 40 minutes or until the biscuit topping is cooked through and a nice golden brown.

Serve warm with whipped cream or our favorite, a scoop of pecan praline ice cream.
