Panko-Crusted Fried Avocado
The superb crispness of the Panko crust combined with the natural creaminess of avocados and the bite of wasabi dipping sauce is a taste experience unlike any other. You won’t be able to eat just one!
¼ cup mayonnaise
½ teaspoon wasabi powder
½ teaspoon fresh lime juice
2 ripe avocados
½ cup flour
1 cup Panko bread crumbs
1 egg, beaten
Vegetable oil for frying

For the dipping sauce, mix the mayonnaise, wasabi, and lime juice. Place in a small bowl, cover, and refrigerate until time to serve.
Place the flour, breadcrumbs, and beaten egg in separate shallow bowls.
Peel and pit the avocados and cut each into six wedges. Bread each wedge individually by coating first in flour, then in egg, and finally in bread crumbs.
Pour vegetable oil into the skillet to a 2-inch depth and heat over medium high heat to a temperature of 350 degrees. Fry the wedges in batches (don’t crowd the pan) for 30 to 60 seconds on each side until golden brown. Remove carefully with a slotted spoon and drain on paper towels.
Sprinkle the fried wedges with a little salt and serve immediately with dipping sauce on the side.
