No-Pecans Pie
- This recipe comes from a friend who loves her pecan pie without the pecans. It reminds us of caramel chess pie–but better!
1 cup sugar
1 cup light corn syrup
3 eggs
3 tablespoons melted butter
1 teaspoon vanilla
1 unbaked 9″ pie crust
Equipment: Natural gas cooktop and oven
Preheat oven to 350 degrees.
Combine sugar and corn syrup in a small saucepan and bring just to the start of a boil. Remove from the heat and stir until the sugar has dissolved.
Beat the eggs in a mixer at medium speed until well blended and continue beating as you pour the hot syrup into the eggs in a thin stream. Mix in the butter and vanilla and pour into the pie crust.
Bake for 40 minutes or until the filling is set. If the filling begins to brown too quickly, cover loosely with aluminum foil.
Let cool completely before serving.
