Hot Fudge Sauce
Store-bought fudge sauce is a pale imitation of this luscious homemade confection.
3 tablespoons butter
6 tablespoons cocoa powder
⅓ cup boiling water
2 tablespoons light corn syrup
1 cup sugar
1 teaspoon vanilla
Equipment: Small saucepan
Natural gas cooktop
Makes about one cup of sauce.
Melt the butter in the saucepan over medium heat. Stir in the cocoa powder until well mixed. Add the boiling water and mix until the mixture is smooth and creamy, using a small whisk if necessary. Stir in the corn syrup and sugar and continue stirring until the sugar has dissolved. Bring the mixture to a boil over medium heat, stirring occasionally. Reduce the heat to low and cook without stirring for six minutes. Remove from the heat and stir in the vanilla.
Serve immediately over ice cream. Or you can empty the sauce into a glass jar, let cool, and refrigerate for later use.
