Fiesta Pasta

Fiesta Pasta

Whole wheat noodles give this colorful and flavorful dish a healthful punch. It makes a great vegetarian entree.

 

8 ounces whole wheat or whole wheat blend noodles, cooked according to package directions
3 tablespoons olive oil
2 tablespoons butter
1 large sweet onion, peeled and cut in quarters and sliced
1 each red, yellow, and green bell peppers, seeded and cut into large chop
2 ears very fresh local sweet corn
1 can black beans, drained and rinsed
Salt and pepper to taste
½  cup fresh basil leaves, chopped

Equipment:  Large pot
Natural gas stovetop

Makes 4 to 6 servings

Cook the noodles to the desired tenderness; drain, rinse in a colander, and set aside.

In the pot in which the noodles were cooked heat the olive oil and butter. Add the sliced onion and saute until almost tender. Add the chopped peppers. Cut the corn from the cobs and add to the pot. Saute until the peppers are tender, stirring occasionally. Add the cooked noodles, beans, salt, and pepper and toss until well mixed. Heat over medium low heat until the mixture is very hot. Add the basil leaves, toss well, and serve.
