Chocolate Lovers Hot Chocolate
This rich-tasting treat pumps up the chocolate and keeps the sugar to a minimum–and it can easily go vegan, too!
2¼ cups 2% dairy milk or cashew milk
½ cup cocoa powder
¼ cup sugar
Pinch of salt
1½ tablespoons cornstarch
1 teaspoon vanilla or cinnamon

Servings: 4 to 6
In a medium saucepan mix together the cocoa powder, sugar, salt, and cornstarch. Pour in ¼ cup milk and stir in well until it makes a paste. Slowly whisk in the remaining milk and mix well. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Stir in the vanilla or cinnamon. Remove from the heat, pour into heated cups, and enjoy!
Note: If you use Silk® unsweetened cashew milk with the lower calorie count per serving (25) and portion out six servings (one-third cup each), your chocolate treat is only 66 calories! Also, the beverage is a bit on the thick side, so we like to add a little more cashew milk to a serving to thin it out; use the microwave to get it back to good sipping temperature.
