Bourbon Chocolate Pie
This melt-in-your-mouth pie should be made with the best Kentucky bourbon.
¼ cup flour
½ cup cocoa powder
½ cup brown sugar
½ cup white sugar
pinch of salt
½ cup butter, melted and cooled
2 eggs, lightly beaten
¼ cup best Kentucky bourbon
1 teaspoon vanilla
1 9-inch pie crust
Whipped cream (optional)
Equipment: Natural gas stovetop and oven
Preheat oven to 350 degrees.
Mix together well the flour, cocoa powder, sugars, and salt.
In a separate bowl whisk together the eggs, bourbon, vanilla, and butter.
Add the dry mixture to the liquid mixture and fold in with a spatula until well mixed. Pour into the unbaked pie crust.
Bake for 25 to 30 minutes or until a knife inserted into the center of the filling comes out clean. Cool on a rack.
Serve with a generous dollop of whipped cream sprinkled with cocoa powder and cinnamon.
