Bourbon Shrimp Appetizers
A perfectly appetizing way to kick off your Derby Day watch party!
1 pound shrimp (45-50 count), peeled, deveined, and tails removed
2 teaspoons extra virgin olive oil
4 teaspoons Cajun seasoning
4 teaspoons really good bourbon (e.g., Woodford Reserve)
Salt and pepper
Seedless cucumber(s) sliced into ¼-inch rounds–one round for each shrimp
Sour cream
Bourbon smoked paprika*
Equipment: Natural gas cooktop
Serves 10 to 12
Mix together the olive oil, seasoning, and bourbon. Add the shrimp and mix to coat well. Saute in a hot skillet until just cooked, about 3 to 4 minutes. Season to taste with salt and pepper.
Place a dollop of sour cream on each cucumber slice and top with a shrimp. Sprinkle with a dusting of the paprika.
* Bourbon smoked paprika is made in Kentucky by aging the spice in bourbon barrels. We do not recommend substituting regular smoked paprika as it will overwhelm the subtle flavors in this recipe.
