Steve’s Christmas White Fudge
Steve borrowed this recipe from Rachael Ray’s collection of holiday favorites and then made changes that make it even yummier.
3 ½ (12-ounce) bags white chocolate chips
2 (14-ounce) cans sweetened condensed milk
½ teaspoon vanilla
½ teaspoon almond extract
½ cup chopped dried cranberries
1 cup shelled pistachios
Equipment: Natural Gas stove
Lightly grease with butter a 9 x 13 inch pyrex dish.
On medium heat melt chocolate chips and mix with extracts and condensed milk. Pour into the prepared dish and quickly stir in cranberries and pistachios.
Cover with plastic wrap and chill in the refrigerator until set. Cut into small squares.
Lady Baltimore Variation
Substitute ½ cup chopped maraschino cherries for the cranberries and ½ cup each chopped dates and pecans for the pistachios.
The cherries need to be as dry as possible before adding to the candy mixture. We first cut them in half and squeeze out the syrup between paper towels, changing towels several times. If you have time to lay out the cherry halves on a cookie sheet and let them dry some more overnight, that helps, too.
