Glazed Sweet Potatoes

vely dish has all the flavor of the traditional, but with a more delicate sweetness–and it’s very easy to prepare, too.
2 sweet potatoes, peeled and cut into wedges
2 tablespoons butter
¼ cup brown sugar
2 tablespoons maple syrup or honey
¼ teaspoon salt
freshly grated nutmeg
Equipment: Natural gas stovetop and oven
Servings: 4
Preheat oven to 375 degrees.
Grease a shallow casserole dish with butter and arrange the sweet potato wedges in one layer.
In a small saucepan melt the butter, then add the sugar, syrup or honey, and salt; simmer over low heat until all the sugar has dissolved. Pour over the potato wedges. Top with a light grating of fresh nutmeg.
Cover the dish with a lid or foil and bake for about 45 minutes or until the potatoes are very tender.
