
Grilled Spiny Lobster Tail
Here’s a quick and easy way to prepare a rare Florida treat.
½ cup butter, softened
¼ cup extra virgin olive oil
2 large shallots, peeled and quartered
4 garlic cloves, peeled and cut in half
1 teaspoon cayenne pepper (optional)
Salt and freshly ground black pepper to taste
4 whole spiny lobster tails, split in half lengthwise
Equipment: Natural gas stovetop and grill
Place the butter, olive oil, shallots, garlic, cayenne, salt, and black pepper in a food processor and process until nearly smooth. Spread a heaping teaspoon of the butter mixture over each lobster tail half. Melt the rest of the butter mixture in a small saucepan and keep warm.
Place the lobster tails, shell side down, on the grill and cook for 6 minutes. Turn over and grill about 2 minutes or until the meat is just done; don’t overcook.
Serve with the melted butter and your favorite grilled vegetables.
