Maple Glazed Sweet Potatoes
We serve up a lot of sweet potatoes when the cold weather slides in, so we look for different ways to cook them. This little experiment proved to be a hit with everyone around the dinner table.
4 medium to large sweet potatoes, peeled
¼ cup melted butter
¼ cup real maple syrup
1 teaspoon cinnamon
¼ teaspoon salt
Equipment: Two cookie sheets
Natural gas oven
Makes 4 to 6 servings.
Preheat oven to 375 degrees.
Grease the cookie sheets with softened butter.
Cut up the sweet potatoes into one-inch cubes and place in a large bowl.
Mix together the remaining ingredients, pour over the potatoes, and toss well to coat each piece. Spread out evenly on the two cookie sheets.
Roast for 35 to 45 minutes or until the potatoes are very tender. Remove from the oven. Flip and stir the potatoes with a spatula to get all the gooey goodness off the bottom of the pans and onto the potato cubes and serve immediately.
FOR HONEY GLAZE: Substitute extra virgin olive oil for the butter and honey for the maple syrup.
